I never thought I’d be that momma that makes two, maybe even three, dinners all in a night. I thought I’d be able to make a cute pinterest meal and my kids and husband would devour that delicious, perfectly cooked — and displayed– meal and ask for seconds. Yeah, well then you have kids and realize as long as they eat something then we are all happy! 🙂
This week, I wanted to try a couple of new recipes. I love eating clean as much as possible — not a lot of sauce or additives, just the main ingredients, cooked with a little olive oil, salt, pepper, basic herbs and voila — delicious. I also am trying to do a little more low carb in hubby and I’s meals just to keep us feeling better. I got these two recipes from a Whole30 meal plan and ya’ll — these are SO good! It was also SO easy, like literally ready in 30-40 minutes and absolute yum.
Recipe 1: One Pan Italian Sausage and Green Pepper
This was SO easy. I added to the recipe by just tossing the veggies with a little EVOO and garlic salt before roasting. But otherwise, one pan and VERY delicious! I made some cauliflower rice on the side for a perfect weeknight meal.
Recipe 2: Garlic Salmon with Watercress
I did a little more improvising here because Kroger was out of watercress when I went shopping on Sunday and so spinach was an easy sub. And I also was cooking with two kids running around my feet so I didn’t have time to pay particular attention to each line of the recipe. But I followed the idea of the recipe and it was certainly delicious! Plus, lining a pan with aluminum foil when roasting salmon is genius because clean up was a cinch! 🙂
For little peanut who continues to be a picky eater, I made her a “homemade” pizza using a helpful fridge staple that my own busy working mama always taught me to keep around. It was such a quick and easy hit that I thought I’d share my trick with ya’ll as well. O had a surprise visitor for the pizza yesterday which made for an even more delicious dinner! 🙂
Recipe 3: “Homemade” Pizza
I’m not going to bore you with the recipe for pizza. I’m sure you have your own delicious recipes for homemade pizza. But my secret is to keep a least a couple of Pillsbury Pizza Crust in my fridge at all times. Seriously, this dough works for pizza, dumplings, sweet bread, whatever. It’s delicious and SO easy. Clearly, O loved it, as did all of her friends last night. 🙂
